I've come up with a workaround for hot chocolate, though, and it is my Favourite Things Friday thing of the week. Also, a bit of a sanity saver.
Simple ingredients: Cocoa powder, coconut milk, 2 stevia packets, and a favorite mug. Oh, and boiling water, not pictured, but you know what that looks like.
Boil the water, open the can of coconut milk and give it a stir to combine any lumpy bits. The fat tends to rise to the top of the can. Don't discard that, it's good stuff. Really, you can Google it. Medium-chain fatty acids, lauric acid, and other words that'll make your eyes glaze over. It tastes good too.
Put about 1/2 Tablespoon of cocoa powder in the mug along with your stevia packets, and dump in about 1/3 cup of coconut milk. Fill the rest of the mug with boiling water and give it a good stir.
Mm-mm good!
I don't understand why there are so many food allergies when everyone has to eat. Every day. Three times a day.
ReplyDeleteIn any case, glad you've got a fun and tasty alternative. I like ovaltine in rice milk. It is actually quite tasty. It goes quite nicely with Lorna Doone shortbread cookies. Alas, I need to start avoiding carbs, especially simple sugars, so there goes the cookies. And my rice milk cocoa. I'll keep your recipe in mind.

I admire your resolve to eat the good stuff! Is Stevia a natural sugar alternative???? Love the 'gingie' mug.
ReplyDeleteThat sounds like a fabulous alternative and I have all those ingredients on hand, I will definitely have to try it.
ReplyDeleteI haven't tried the strevia for sweetener but I do use Truvia in my coffee and tea - love it and no calories and it is natural.

your beautiful creations make me want to dig into my stash and sew, sew, sew.
Enjoy your hot cocoa lady:)
ReplyDeleteI may have to try this! You know I avoid sugar too ~ pre-diabetes and all. I've heard that coconut milk not only tastes good, but is good for you. An added bonus then. :-)
ReplyDeleteBack in the day my Mum used to make us hot cocoa as a treat.
ReplyDeleteIm glad there is still something left on this earth you can eat /drink. I am never giving up sugar. EVER. I may have to re-think the gluten thing at some point though.
Im left wondering whether boiling water looks different in the Northern Hemisphere and feel a bit ripped off I didn't get the answer to that burning question.
Thanks for the great recipe! I, too, try to avoid sugars so I'll be giving this a try. Hmmm, coconut milk. I've never tried that but it sounds wonderful.
ReplyDeleteI will have to try this!
ReplyDeleteYour resolve to eat the good stuff is amazing to me. I know I'd cave. ☺ Thanks for the recipe. I've never had coconut milk, but will look for it in the store next time I shop. Happy FTF! ☺
